I’m still compiling my food posts from Vietnam but here’s a teaser post – Vietnam’s iconic coffee which is available at any cafe, stall or restaurant.

By now, most of us are familiar with this contraption. Vietnamese Coffee is served with its own filter system right over your coffeecup.
The coffee grounds are placed into the stainless steel cup and compacted lightly with a piece of metal that sits inside. Hot water is then poured into the cup until it reaches the brim then its covered.
The coffee will drip out ala espresso into the coffee mug below which would have first been filled with sweet condensed milk.
When all the coffee has dripped through, the contraption is removed and the coffee stirred to mix in the milk, before drinking. You can have it hot or cold. I recommend taking it cold because its way too sweet to drink hot!
To have it cold (Ca Phe Sua Da), the hot coffee mixed with milk will then be poured into a glass filled with ice to allow it to melt. By the time you drink it, the consistency is quite light after being watered down by the ice, and it would also have been slightly diluted so its less sweet.
Perfect way to cool down after a hot hot day walking the streets of Saigon!

By the way, if it would amuse you, this is the first time I’m seeing such a contraption. Maybe because I don’t drink coffee
