Quick and Easy Cold Chicken Salad

I had some leftover roast chicken recently and got tired of eating them cold. So, one morning, while preparing my bento lunch box, I decided to experiment with making a cold chicken salad.

I’m averse to mayonnaise so I went for something clear and refreshing. Here’s how I whipped up a refreshing and simple cold chicken salad.

You need:

  • 1 roast chicken thigh shredded
  • 1 tsp Soy sauce
  • Lemon
  • 1tsp Apple Cider Vinegar
  • Pinch of sugar
  • Dash of white pepper
  • Sesame Oil (Optional)

How to:

  1. In a bowl, mix up the soy sauce and apple cider vinegar. Add a squeeze of lemon and some sugar to tone down the sourness. Add some pepper if you feel like it.
  2. Pour the mixture over the shredded chicken and toss.
  3. Leave aside for a couple of hours and its good to serve chilled.

I whipped this up in the morning experimentally, and was quite surprised to find that it was quite tasty! I tossed the chicken in the mixture then laid it on a bed of fresh lettuce leaves and garnished with a cherry tomato. By lunch time, the flavour had seeped into the chicken and it was tasty and refreshing.

its lunch and i am suddenly craving for your chicken salad now. yummm im ok with cold meat salad, you only have this tiny salad for lunch?

@xin: Oh no! It was part of a larger bento set. I’d die of starvation otherwise LOL :)
