I had some leftover roast chicken recently and got tired of eating them cold. So, one morning, while preparing my bento lunch box, I decided to experiment with making a cold chicken salad.

I’m averse to mayonnaise so I went for something clear and refreshing. Here’s how I whipped up a refreshing and simple cold chicken salad.
You need:
- 1 roast chicken thigh shredded
- 1 tsp Soy sauce
- Lemon
- 1tsp Apple Cider Vinegar
- Pinch of sugar
- Dash of white pepper
- Sesame Oil (Optional)
How to:
- In a bowl, mix up the soy sauce and apple cider vinegar. Add a squeeze of lemon and some sugar to tone down the sourness. Add some pepper if you feel like it.
- Pour the mixture over the shredded chicken and toss.
- Leave aside for a couple of hours and its good to serve chilled.
I whipped this up in the morning experimentally, and was quite surprised to find that it was quite tasty! I tossed the chicken in the mixture then laid it on a bed of fresh lettuce leaves and garnished with a cherry tomato. By lunch time, the flavour had seeped into the chicken and it was tasty and refreshing.
