Quick Chilled Soba and Steamed Zucchini

There are days when I don’t feel like slaving over the stove yet I don’t quite feel like eating out either. On these days, I go easy and light on the tummy with a simple soba noodles dish I whipped up one evening.

I love Zucchini (Courgettes to the British) and I love cold soba noodles, so this was a perfect combination.

What you need:

  • Some Soba noodles
  • Japanese soba noodle sauce
  • 1 Zucchini cut into slices

How to:

  1. Place the sliced zucchini on a plate and sprinkle a little salt over it then place in a steamer or in a wok and steam for about 8 minutes. The zucchini should be still green but the edges should just be turning a little translucent.
  2. While the vegetables are being steamed, boil up the soba until it is just cooked al dente, then drain, rinse with cold water and add some ice into the water to chill the noodles.
  3. Put the chilled noodles in a bowl and pour over some ready made soba noodle sauce. Serve with the steamed zucchini.

I like the interplay of the hot zucchini and the cold soba noodles on the tongue. The little sprinkling of salt brings out the sweetness of the zucchini and steaming it is the easiest, most healthy way to cook it, yet preserving the vitamins of the vegetable. This also makes a suitable dish for vegetarians.
