One of my favourite vegetables is French Beans (Kacang Buncis). I like them cooked quickly as a stir fry so they are still crunchy. The conventional method is to stir fry them with garlic as a typical vegetable stir fry dish but I decided to up the ante and add dried shrimp for flavour.

Slicing the beans on a diagonal ensures a greater surface is exposed so it cooks more quickly thereby cutting down your cooking time. This also ensures some really nice crunchy beans.
Here’s my recipe for a simple Stir Fry French Beans with Dried Shrimp.
What you need:
- 200g French Beans washed and sliced on the diagonal
- 1 small carrot cut into strips
- 2 cloves of garlic diced
- A small handful of dried shrimp (hei bee) washed, soaked and pounded
How to:
- Wash the dried shrimp and soak them in cold water a little. You can pound them till fine or finely chop them or simply leave them whole if you like.
- Heat some oil in a wok and stirfry the garlic until fragrant but not brown.
- Add the dried shrimp and fry until fragrant.
- Add the beans and carrots and stir fry quickly until cooked.
- Add salt to taste but as the dried shrimp is usually salty I don’t.
This is a very quick dish to prepare and very tasty because of the fragrant dried shrimp. Optionally, you can spice this up by adding some chilli paste or sambal to the dried shrimp once it is cooked, then add the vegetables.
Serve with hot rice – yummy!
