Dinner Starter - Crispy Fried Prawns

I decided to cook for Mother’s Day instead of paying for over priced substandard restaurant fare and went with a western food theme. For starters, I decided on Cripsy Fried Prawns which I knew would go down a treat. This recipe’s really easy and quick and the prawns were polished up in no time!

How to:

  1. Clean and shell the prawns and then de-vein and butterfly them leaving the tails on.
  2. Marinade the prawns with soy sauce and pepper for at least half an hour. If you like a touch of spiciness add a dash of paprika powder to the marinade.
  3. When ready, mix up the flour for coating. I use the Japanese style bread crumbs that is used for frying tempura. I find its lighter in texture and crispier.
  4. Heat up some oil in a pan or wok. You need quite a lot as you will be deep frying. Deep frying the prawns makes them crispier and they cook faster too.
  5. Dip the prawn into the beaten egg and then into the flour and breadcrumb mix and place into the hot oil.
  6. Fry till golden and remove from oil, drain and serve.

I found this flour and breadcrumb mixture held and stayed crispy even after the prawns had been left out for a while. It makes a great snack and I served it with tomato sauce and potato wedges.

My effort for crispiness usually turn soggy and chewy. Next time will try your flour combi.

seems easy to make. but how to know when the prawn is cooked/not overcooked? till the bread crumps turns golden?

Tummythoz: This one held up for me! I think its the cornflour mix.

xin: Its really easy. Usually prawns cook very quickly so by the time the breadcrumbs turn golden they’d be cooked. Rule of thumb is when the prawns curl up, they are done!
