I had a version of roast duck spaghetti at a restaurant once. It had tickled my tastebuds ever since so I thought to duplicate it at home. As with my other recipes, this one’s really easy and fast too!

duck pasta

You need:

  • 1 roast duck drumstick shredded (reserve the sauce that comes with it)
  • 1 tomato diced
  • 1 onion diced
  • 3 cloves of garlic chopped
  • Fettucine or pasta of your choice
  • Dried Italian herbs and salt and pepper to taste
  • Worcestershire sauce

Serves: 2 persons

How to:

  1. If you are using dried pasta, start cooking the pasta according to the instructions on the packet.
  2. In the meantime, in a pan, heat up some olive oil and start by frying the garlic and onions until soft.
  3. Add in the shredded duck meat and continue stir frying until fragrant.
  4. Add the diced tomato and a little bit of the sauce that came with the roast duck. Alternatively, add some water to make a little sauce.
  5. Add a dash of the worcestershire sauce and the dried herbs and pepper. Taste and add salt if necessary.
  6. Drain the pasta and toss into the pan.
  7. Toss the pasta to coat it with the sauce and then serve.

My recipe is different from the one I ate outside, but I like it this way. Its also a great way to make use of leftover roast chicken or roast turkey. Besides, its really yummy!

Lovely improvisation! How about substituting water with red wine? :D

It sounds lovely. Now where do I get good roast duck from first!

Pablo: It might work, but then I’d have to drink up the rest! lol…

Cheesey: Any roast duck will do. No need to be good because you are going to cook it anyway!

Now, that wouldn’t be a problem, would it? ;)
