Quick and Easy Mushroom Pasta

One evening, I realised I did not have much by way of ingredients in the fridge, except for some fresh mushrooms, so I whipped up a quick and easy mushroom pasta that I believe would make a good vegetarian pasta dish too. Here is my recipe for a Quick and Easy Mushroom Pasta.

You Need:

Serves approx 2-3 persons

How to:

  1. Cook pasta according to directions on packet.
  2. Heat up some olive oil in a pan and start frying the garlic until it is fragrant. Do not let it brown or burn.
  3. Add the sliced mushrooms and continue frying. As the mushroom is cooking it will release some water so do not add water immediately.
  4. When the mushroom has softened slightly, add the diced tomato. If you prefer a stronger tomato taste, add some tomato puree.
  5. By now there should be some liquid in the pan. You are not making a sauce so you don’t need too much liquid. Just enough to cover the bottom of the pan.
  6. Add the mixed herbs and a pinch of paprika powder and salt and pepper to taste.
  7. Drain the pasta and add to the mixture. Toss the pasta through the sauce and serve.

See, I told you it was quick and easy! It is good for those days when you don’t feel like having a meat option or if you have vegetarian friends over. Let me know how you like it!
