Steamed Pork Ribs with Salted Fish
Salt fish (hum yu - Cantonese or kiam hu - Hokkien) is fish pickled with salt and dried. It is usually used in small doses for flavouring foods although I’ve read that it isn’t very healthy. I don’t eat a lot of it, but I found a small piece in my fridge one day and decided to have it with pork. Here’s my recipe for Steamed Pork Ribs with Salted Fish.
You need:
- Pork ribs chopped into small pieces
- A knob of ginger peeled and sliced
- A small piece of salt fish crumbled
- Oyster sauce and soy sauce for seasoning
How to:
- Season the pork ribs with the oyster sauce and soy sauce. Don’t use too much. Leave aside to marinade for at least half an hour.
- Place the ribs on a heat proof plate and lay the sliced ginger and salt fish on top of it.
- Put to steam for about 45 minutes to get the meat really tender. 30 minutes if you have fewer pieces.
This dish is wonderful served hot and with hot rice. The salt fish adds a slightly pungent and fragrant tang to the dish which somehow works very well with the ribs. Definitely one to whet the appetite. Enjoy!
