Roast Chicken with Vodka and tasty vodka apple sauce

I was experimenting in the kitchen one day and discovered a gem of a recipe using chicken and vodka. This is my simple recipe for Roast Chicken with Vodka accompanied by a Vodka Apple sauce.

What you need:

For the Roast Chicken:

  • 4 Medium sized chicken drumsticks
  • 1 tablespoon of oyster sauce
  • half teaspoon of light soy sauce
  • half teaspoon of worcestershire sauce
  • 2 tablespoons of Vodka
  • Mixed herbs and pepper

For the sauce:

  • Remaining chicken marinade
  • Apple Sauce
  • Sugar

Serves: 2 persons

How to:

  1. Marinade the drumsticks with all the ingredients above and leave for at least half an hour or overnight for better flavour.
  2. Lay the chicken drumsticks on some foil or in a roasting tin and roast in an oven at 200 Celcius for about 20-30 minutes, turning frequently so it does not burn. If you find the chicken drying out, you can use the marinade to baste it. Roast till brown.
  3. In the meantime, pour the remaining marinade into a saucepan and bring to a boil. Stir and let it reduce a little then add 2 generous spoonfuls of apple sauce. Stir until mixed then turn off the fire.
  4. Serve the roast chicken with the sauce on the side.

The chicken has quite a piquant flavour and you don’t get much taste of the vodka. However, the sauce makes up for it by being both a little sweet and a little salty. With the Vodka and worcestershire sauce, the sauce can be a little sharp on the tongue so the sugar helps to tone it down a little.

Importantly its quick and easy to prepare, and tasty too! I would serve it with a green salad to take the edge off the tart flavour of the sauce. Yummy!
