Easy Kim Chi Jigae Noodle soup

I love Korean Kim chi jigae or spicy kim chi soup. It totally whets my appetite and is lovely on a cool day or in an air-conditioned restaurant of course! I was experimenting at home and came up with a pseudo kim chi jijae noodle soup that makes a nice light lunch.

What you need:

Serves: 1 person

How to:

  1. In a small saucepan, boil up some water. When the water is boiling, add in some kim chi and some of the sauce. Bring to a boil.
  2. Add the dried seaweed (I use the dehydrated cooking seaweed at the Japanese food section not the crispy flavoured type) and pork or chicken slices.
  3. Stir in 1 teaspoon of kojujang. Be careful, it can be spicy so add according to taste.
  4. Finally, add in the instant noodles and cook according to the instructions on the packet or to your preference.
  5. Pour out and serve.

This is my easy recipe for kim chi noodles and I don’t profess to be any good at cooking Korean food. However, this method suits my tastebuds and brings it close enough to the taste of the kimchi jigae I get at the Korean restaurants. I find it spicy enough this way, though if you prefer it slightly more spicy then you can add some chilli powder.

Does it take long for you to finish the two tubs? I am thinking of buying Miso paste but wondering how long it will take for me to finish them :P

Pablo: If you eat it everyday or use it everyday, no it doesn’t take long. Otherwise, it takes forever and a day. :P You can get small packets of miso paste from places like Jusco or Isetan - no need to buy the whole tub.

Yeah…it depends on how often one eats it. By the way, a friend of mine once cooked Kim Chi with Beef soup. Nice :D
