Healthy Green Salad
On a hot day when I did not have much appetite to eat, I decided to indulge in a healthy green salad for dinner.
Ok, so I cheated a little. I bought a pack of prepacked salad leaves from the supermarket for RM8.99 a pack. It came with a pack of French salad dressing, which is my dressing of choice.
The pre-packed salad is actually enough to feed 2 persons if that’s all you are having, or up to 4 persons if it is used as a meal accompaniment. I thought it was a decent price because you get 4-5 types of vegetables in there, which would cost more for you to buy separately. If you have a big group of people to make a salad for, then buy the vegetables separately, it’ll work out cheaper.
The package says its pre-washed but I always wash them again to be on the safe side. Then, I added in cut tomatoes (because I like them in salads) and a hardboiled egg for protein. Toss them all together, and voila! A healthy green salad for dinner in 5 minutes!

I toss in cherry tomatoes, some cornflakes and italian dressing. Gives it a good bite!
PB says: Corn flakes! This I must try
a Bit of olive oil and a pinch of salt and pepper will give it a rel good taste~ ;3
PB says: Ah yes, perfect
[...] its quick and easy to prepare, and tasty too! I would serve it with a green salad to take the edge off the tart flavour of the sauce. [...]

Hehe….this is my dinner of choice these days for me and hubs. One packet of prepacked salad leaves and a whole bunch of other stuff thrown in. It’s amazing how creative one can get when one is desperate.
PB says: I sometimes like something more substantial for dinner but yes, I agree that desperation really makes for great creativity
