Tips for a delicious fried rice

It isn’t hard to get a great tasting and great looking fried rice just like the Ginger and Prawn fried rice I dished up before in the picture above.

Here are some tips to help you always get a nice fluffy plate of fried rice:

  • Make sure your wok or frying pan is hot before you start. Otherwise, your ginger and/or garlic won’t fry well and the taste and fragrance won’t be released fully.
  • The rice goes in last. Always fry the garlic first, followed by the meat, and then the vegetables. Then, move the ingredients aside and scramble fry the egg. Only then add in the rice. This makes sure that the flavour of the ingredients are sealed and have been released. It is the flavour of the ingredients that make the rice not the other way round.
  • The more eggs the fluffier. If you want a light fluffy fried rice, use more eggs. The more eggs you use, the fluffier the rice gets. I’m not sure why, but it works!
  • Fry over high heat. Do not turn down the heat. You want the heat high so everything cooks and chars a little for some added flavour. Of course, don’t let them burn.
  • Use cold cooked rice not freshly cooked rice. If you want fluffy rice that doesn’t stick together in lumps, use cooled rice or better yet, leftover rice. Hot or freshly cooked rice is sticky because of the starch so your fried rice will end up lumpy and “wet”. If you use cold rice, it is less starchy and so will make a better plate of fried rice.

That is the basics to a good plate of fried rice. The rest of it is up to your imagination.

PB says: Aren’t the Chinese great at using up leftovers? :) You are welcome to try the rice but I’m not sure if it stands up to scrutiny! hehe…

not sure if by adding more eggs will make the rice fluffier, but the rice has got to be kinda a lil drier than those normal just cooked rite

one way to make the eggs to be fluffier is to use more oil and add in the eggs first, more oil is actually kinda bad …

PB says: I was told about the eggs thing by a cook but that’s true about the oil. Its bad though to use a lot of oil
