One evening, there wasn’t much in the fridge to cook with, so together with Sis, we decided to do up a casserole with whatever we had. This included chicken pieces and sausages. So, we came up with a simple chicken and sausage casserole
You need:
- Some chicken pieces
- Some sausages – I use pork but you can use chicken
- Mushrooms
- Large Onion
- Carrots – cut into chunks
- Potatoes – cut into chunks
- Basil leaves
- Mixed herbs
- Sprinkle of paprika
- Olive oil
How to:
- Marinade the chicken pieces with olive oil, mixed herbs, salt and pepper. Leave aside for about 20 minutes. Then brown the chicken pieces in a pan to seal the juices.
- Add the sliced sausages, carrots, potatoes and onions to brown.
- Pour the mixture into a casserole dish. Add the basil leaves, salt and pepper to taste and some paprika powder. Add about a cup of water. You don’t want a stew, just some gravy.
- Put into a pre-heated oven at about 200 C for about an hour until the chicken pieces are cooked. Serve hot.
Perfect on a cold rainy day. It actually tastes better the following day once all the flavours have absorbed into the meat and vegetables. You can add celery or any other hard root vegetables too. Or be like me and just whatever you have on hand. That’s what I love about casseroles. Enjoy!
