Fried fish with sliced ginger and soy sauce

This is an easy dish that you would find in most Chinese households. I however, have only just tried it out for myself after watching my Mom cooking it so I felt it was worthy of a post :)

  1. If you are frying a whole fish, fill the frying pan or wok about halfway with oil and heat it up. Then fry the fish till its cooked and crispy. A rule of thumb I use when I fry fish is to fry each side untl I don’t hear so much popping in the oil. That usually tells me its about done.
  2. When the fish is cooked and crispy, remove from the oil and remove all the oil from the wok except for 1 teapoonful.
  3. In this teaspoonful of oil, fry the ginger slices until they are fragrant and starting to turn brown.
  4. Turn off the fire, stir some soy sauce through it, the scoop over the fried fish.

I usually use a small grouper or sea bass but it works with most white fleshed fish that don’t have a strong smell or taste. It might even work with fish fillets.
Serve with hot rice and stir-fried vegetable for a simple homecooked asian meal.

Wow, you make it sound so easy! I am terrified of cooking fish. I don’t know why. The furthest I would go is doing up some fish fingers.. I may have to venture in deep deep water with your recipe.. once I am back in Italia.. *sigh*
