Somen noodles in miso soup with seaweed

Some days, I don’t feel like a heavy dinner. This is usually when I’ve had a good lunch or a late lunch, or just simply when I don’t feel like cooking very much.

On those days, I usually whip up something simple (and on a cold day) something hot to line my tummy so it doesn’t growl all night long. My tried and true fave is Somen noodles in miso soup with seaweed.

  1. Setting this up is easy. Boil some water in a pot and cook the noodles until they are cooked but still springy - al dente if you will.
  2. Boil up more water in a kettle and pour over the miso paste, mixing it up to dissolve into the soup. Be careful as miso can be very salty so add enough water to taste.
  3. Scatter in some dried seaweed. I buy the sort that only need hot water to hydrate. There are others that need boiling up before they are cooked.
  4. When the noodles are cooked, pour the soup over it and enjoy!
  5. I sometimes add a poached egg for protein, or some chicken slices.

As miso is salty, I don’t have this very often. However, because its quick and easy, it makes a fulfilling meal all on its own.
