Ginger and Prawn fried rice

I’m sorry I’ve neglected this site for a while. To commemorate my return to cooking and eating, I present a simple and quick fried rice dish. Fried rice is one of the easiest meals to make and one of the tastiest too. It can be easily made with leftovers and you should use leftover rice as it is less sticky.

Serving size: 1

You need:

  • 1 bowl of leftover or cold cooked rice
  • 6 prawns lightly marinated in soy sauce and pepper
  • 1 egg
  • sliced bit of ginger and some garlic
  • soy sauce and pepper to taste

How to:

  1. Fry the garlic and ginger in hot oil.
  2. Add the egg and scramble quickly, then add the prawns.
  3. When the prawns have turned red and are curled up, add the rice and stir fry over high heat. Add some soy sauce and pepper to taste.
  4. When it smells fragrant and the rice has little burnt bits around the edges, its done.

This dish reminds me of my late grandmother as she used to fry the most delicious ginger and anchovy (ikan bilis) fried rice this side of heaven. I improvised it a bit and I used the leftover ginger from my previous steamed chicken with ginger dish.

Lovely on a cold rainy day.
