I do a lot of quick steamed food you will see, because its usually fast and healthier. I can prepare it when I get back and have my shower before I sit down to eat. I’m not quite sure how I hit on the idea of this dish.
I was inspired by the ginger topping on steamed fish. Instead of just slicing the ginger to put it on top, I decided to pound the ginger with some garlic. Pounding the ginger seems to intensify the flavour. This one takes a little preparation because of the ginger.
You need:
- Quarter of a chicken cut into small pieces
- About 1 inch of ginger and 2 medium sized cloves of garlic
- Light soy sauce, pepper and a touch of oyster sauce
- Sesame oil
How to:
- Marinate the chicken pieces with the light soy sauce, pepper, oyster sauce and a few drops of sesame oil. Leave aside for about 1/2 and hour or at least 10 minutes if you don’t have time.
- Pound the ginger and garlic to a rough paste. Be careful you don’t get any splashed in your eyes. I use a small mortar and pestle.
- Spread the ginger-garlic paste over the top of the chicken.
- Heat up the water in a steamer or wok with steamer insert until it is boiling. Then, place the plate inside and steam for about 20 minutes or until it is cooked.
It actually comes out quite spicy because of the ginger, so if you don’t like your food strong tasting, reduce the ginger. You can see from the picture I had a lot of ginger. Too much, actually so my tongue felt like it was on fire! Best served with stir-fried vegetables and hot steaming rice. Perfect on a cold day but not so much on a hot day.
When you are done and there is still a lot of ginger left, scoop it out. I froze the ginger paste and reused it for fried rice, which I will be featuring soon.

Yeah…I was gonna say: I do a stir-fried chicken using the same ingredients too.
Everyone loves it. But I normally add more sesame oil. It is so fragrant and appetite inducing.
