Fish Wrapped in Egg

I first tasted this dish in Kim Gary, the Hong Kong themed restaurant, when I ordered fish wrapped in egg on a bed of vegetable rice. When I ate it, I thought it was one of the best things I’d ever eaten! So, the next time the cooking bug hit me, I decided to try to replicate it at home.

You Need:

  • 2 packs of fish fillets – I used the frozen dory ones from the supermarket
  • Soy sauce and pepper to season
  • 3 Eggs
  • Dash of oil

How To:

  • First season the thawed fish fillets with soy sauce and pepper. I like mine nice and peppery so I often give it a healthy dash of pepper.
  • Pan-fry the fish in a non-stick pan, you’ll need very little oil or hardly any at all.
  • Once it’s cooked through, remove it and set it aside.
  • Beat up your eggs.
  • Pour in a little bit in the pan and swirl it around so that it makes a thin omelette.
  • Place the fish in the middle of the omelette and wrap it up so it makes a parcel.

Serves about 3-4 pax.

That picture doesn’t look too appetising as my omelettes were a bit thick so the fish didn’t wrap up in it too well but it tastes very good! Especially when served with a garlic fried rice or fried rice with chopped vegies.

I am absolutely hopeless when it comes to cooking fish. I have no concept of that.. but I can make a mean fish fingers, so maybe I could try the omelette with fish fingers instead, hor?

PE says: Fish is my favourite meat! But sure you can do it with fish fingers too :) Actually, this dish works really well with white fish fillets like anything you can pick up in the market and supermarket!

I have not been to Kim Gary since it opened in the Curve… my family absolutely refuses to set foot in there. So I guess I shall have to imagine what this dish tastes like…

my mom make pretty good battered dory fish fillet as well. a bit of egg, and some corn flour to make it slightly crispier. yum!
