Stir-fried mixed vegetables and mushroom with scallops

I had a cauliflower in the fridge and some frozen fresh scallops. Cauliflower is never my vegetable of choice but since it was there it had to be eaten. So, I went for something colourful in stir-fried mixed vegetables with scallops and mushrooms.

You need:

half of a small cauliflower cut into small florets
Packet of snow peas
Small carrot – sliced
Mushrooms of choice – I used Shitake
Scallops
Oyster sauce for seasoning
Chopped garlic

Serves: 2

How to:

1. Heat up some oil and fry the chopped garlic until fragrant but not brown.

2. Put in the cauliflower florets and stir fry. Add a little bit of water, about a tablespoonful, to help it soften.

3. Add in the sliced carrots and snow peas and mushrooms. Stir fry a while then add in the scallops.

4. Add in about 2 teaspoons of oyster sauce and continue stir frying. You can add more water if you prefer more gravy.

5. Dish out and serve.

I would add in a dash of chinese cooking wine just before dishing out as it adds a nice aroma and flavour to the dish. This is a simple vegetable dish that anyone can do and it makes a nice entry on the dinner table as its so colourful! Oh and you don’t see the scallops do you? That’s because they were so tiny!

I love stir-fried cauliflower… even better if it’s broccoli with scallops. Yum!
