Stir fried Tuna Pasta with egg

Following on my canned tuna experiment which was not really an experiment, I had to use up the balance of the tuna. I had kept the remainder tuna in the fridge and did not relish eating it cold on toast, so I cooked it up with some pasta. I like playing around with pasta as its easy and fast to cook and filling too. This is a simple Tuna Pasta recipe I improvised on.

You Need:

  • About 2 handfuls of dried pasta – I like to use Fusili (spirals) or Penne (quills)
  • half�a can of tuna
  • A medium sized clove of garlic chopped
  • 1 egg
  • Salt and black pepper to taste
  • Olive Oil
  • Some dried Italian mixed herbs or Oregano and Thyme

Serves: 1 person

How to:

  1. Boil up the dried pasta according to the directions on the pack together with some salt and a dash of olive oil so it doesn’t stick together. I usually just boil them until they feel springy (al dente) and I bite into them to see if they are cooked. Worked so far for me. Pour away the hot water and run the pasta under cold water to stop the cooking process.
  2. Heat up some olive oil and fry the garlic until fragrant but not brown.
  3. Add the tuna and stir until fragrant.
  4. Add the cooked pasta and stir again.
  5. Add salt and pepper to taste and a dash of herbs.
  6. Stir in the egg.
  7. Pour out and serve.

You can add in some sliced bell peppers or carrots for vegetable intake. I like to have this with lettuce leaves. Stir frying the pasta gives it a nice pan fried taste and texture compared to having the tuna just mixed in like a salad. Fast, easy and hot recipe.

I did wonder what had happened to the rest of the tuna! LOL!

This is a new take on pasta for me… stir-fry and egg! Sounds absolutely de-lish!

i tried this.. using fresh herbs and a little bit of chili padi..
i didn’t add eggs, the tuna is more than enough..

hmmm js some thoughts: can we prepare this the night before and keep it cold in fridge? :D
